My weekend morning, “KIDS ARE AT HOME” pancakes! Nutrient dense and no refined sugars. SO GOOD!

1 cup oatmeal flour (whole oats or freshly ground oatmeal)
1 cup whole wheat flour
1/4 cup buckwheat flour
3 Tablespoons coconut palm sugar
4 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
2 large eggs (or flax seed eggs)
1-1/4 cups unsweetened almond milk
1/4 – 1/2/ cup organic apple juice (add more for thinner pancakes/less for thicker)
1 Tbsp coconut oil
3/4 cup dried cherries, chopped (be careful of ones with added sugar!!!)
1/2 cup chopped pecans
Agave nectar for serving (I like Madhava Agave Maple Cinnamon Syrup)


Preheat a nonstick griddle over medium heat. Mix all ingredients in a medium bowl and add more apple juice to thin batter, if desired. Drop batter on skillet using 1/4 measuring cup. Cook on one side until edges begin to brown and bubbles form on top. Flip and cook on opposite side until cooked through. Turn only once for fluffy pancakes. Serve immediately with syrup.
