Homemade granola bars…Always a favorite in our home and so easy to make. This is my Sunday afternoon prep for the week, and something satisfying that I crave after running. ENJOY!

CHOCOLATE ALMOND GRANOLA BARS, by Kristen Tinker
makes 12 bars

INGREDIENTS
1/2 cup Medjool dates
1 egg (or flax seed egg: 1 TBSP ground flax seeds/2.5 TBSP water)
4 T maple syrup
3 T almond butter
2 cups rolled oats
1/2 cup (fine) almond flour
1/2 tsp salt
1/4 cup raisins
1/4 cup mini Enjoy Life Vegan Chocolate Chips
1/ tsp vanilla extract
1/2 tsp cinnamon
1/4 cup chopped raw almonds
(Vegan) butter

DIRECTIONS
Preheat oven to 350. In food processor, puree dates into a ball. Add egg/flax egg, maple syrup and almond butter. Puree until well blended. Meanwhile, combine oats, almond flour and salt into small bowl. Add date mixture to bowl and stir. Add raisins, chocolate chips, vanilla, cinnamon, and chopped almonds. Stir well. Mixture will be moist but not wet. Line a 8×8 pyrex dish with 2 sheets of opposing parchment paper, rubbed with vegan butter or coconut oil, to allow for easy granola bar removal. Place granola mixture into prepared pan and press down until uniform and smooth in thickness. Bake in preheated oven for 10-15 minutes. Allow to cool completely, remove from pan, and slice into 12 bars.
