Summertime calls for cold treats!

Coconut, cherries, and chocolate come together in this frozen dessert. I’ve packed it full of heart healthy foods including oatmeal and coconut with antioxidants from cocoa and cherries. What I love about this fun dessert is the idea that it features summer colors (think red, white, and blue) without artificial colors that I see in many of the amazing 4th of July desserts and treats.

red, white, and blue, but the artificial colors are pretty scary too!
 
I can’t beat around the bush on this one, friends….Synthetic, chemically-made red, white, and blue coloring on fancy, holiday desserts WILL mess up your hormones! Artificial colors have have been linked to cancer and are endocrine disruptors that mess with your weight, cognition, health, emotions, and more!

If you are looking for a 4th of July treat that is cold, easy, fast, and without gluten or artificial colors, I’ve got your back! These Chocolate Crusted Coconut Cherry Bites are just right! And, the best part?…It comes together in minutes and is painfully easy to make. This is one your kiddos can head to the kitchen to throw together for a summertime gathering. Get creative…any fruit or flavor will do! Try blueberry, vegan chocolate chips, or strawberries. Endless summer flavors await!
CHOCOLATE CRUSTED COCONUT CHERRY BITES, makes 10-12
COCONUT CRUST: Preheat oven to 350 degrees. Mix all ingredients into a small bowl and roll into 10-12 equal-sized balls. Press into the bottoms of a mini muffin pan to form small disks. Bake approximately 5 minutes, rotating pan and checking crusts. They are done when a bit dry around the edges. Watch carefully to prevent overcooking.
    • 1/2 oatmeal flour (you can grind slow cooked oats in a coffee grinder to make oatmeal flour)
    • 1 Tbsp cocoa powder
    • 3 Tbsp coconut flour
    • 3 Tbsp maple syrup
    • 1 pinch salt
    • 1 tsp vanilla extract
COCONUT CHERRY FILLING: Coarsely chop cherries, and slightly soften whipped cream. Mix together in a small bowl and fold cherry juice into mixture, allowing it to incorporate but not to keep a “swirled” look that shows the white and red contrast.
    • 10 oz bag frozen cherries
    • 1 tbsp Purium’s Apothe Cherry
    • 2 cups Coconut whipped cream (homemade or So Delicious)

GARNISH OPTIONS: Press garnishes into the tops of each bite. Place pan in freezer until the bites are solid and frozen.

    • Coconut chips or flakes
    • Fresh blueberries or cherries
    • Mini vegan chocolate chips
TO SERVE: Dip the bottom of the mini muffin pan in warm water for a few seconds. Then just pop them out and they’re ready to eat on a hot summer day! Enjoy! And, please let me post and tag me @pacerkristen with you own creations!
