I love seasonal dishes, ones that celebrate and inspire the day. Think about it, each of our American Holidays have traditional, celebratory fare that fits the season. And summer itself is no exception. Seasonal food inspires, but it is also deeply rooted in answering our inherent call to nourish our bodies with the nutrients available during that time of the year. Today, I’m beyond thrilled at the cherries finding their way back to the market for pairing with nearly any dish you serve!

Rich in Vitamin C and natural melatonin, Cherries are a superfood. Beautiful and nutritious, cherries also are rich in antioxidants, which loosely translated means they battle the oxidative stress and free radicals you sustain from toxins, chemicals, and even natural metabolism! If that weren’t enough, fruits loaded with Vitamin C (strawberries and cherries for example) combine with iron rich foods to increase your iron absorption. And Vitamin C is a precursor to Collagen for a healthy gut, beautiful skin, and healthy connective tissues. Cool, huh? Today’s star is the cherry, but don’t be fooled… I’ve also thrown in hemp seeds and pine nuts for their Vitamin E, fatty acids, and the complete protein (it contains all nine essential amino acids!) provided by the hemp seed.

Crunchy, naturally sweet, and light, yet hearty to stand up to any food, FRESH Cherry Salsa is my new FAV!!!!…Easy, beautiful, nutrient rich, and it involves NO COOKING!…Just some dicing, opening a package of my favorite Path of Life Organic Quinoa and Brown Rice mix, and you have yourself one perfect dinner to serve for company OR family! Enjoy!

FRESH CHERRY SALSA, makes approximately 2 cups

Mix all prepared ingredients in a medium bowl. Salsa may be served immediately, though flavors are best after 2-3 hours of refrigeration. Serve over fish or chicken for a meal, on lunchtime salads, or as an appetizer with tortilla chips.


1 pound fresh cherries, pitted and roughly chopped

1 clove garlic, minced (roughy 2 tsp)

1 TBSP hemp seeds

2 TBSP pine nuts (ideally toasted)

1 T red or yellow onion, finely chopped

3 TBSP cilantro, finely chopped

1 tsp red wine vinegar

1 TBSP fresh lime juice (add to suit your taste)

1/8 tsp Pink Himalayan Salt

1/8 tsp freshly ground pepper

pinch Cayenne

** FRESH CHERRY SALSA MAKES A COMPLETE MEAL WITH GRILLED CHICKEN (brush with small amount of coconut oil; season with chipotle chili powder, Pink Salt, and pepper), QUINOA (open a bag of Organic, Path of Life Quinoa and Brown Rice; toss with 3 TBSP fresh lime juice, 1/8 tsp Pink Salt, and 3 TBSP chopped pecans, then rewarm in microwave), CHOPPED SPINACH, and SLICED AVOCADO.
